- Limpiar muy bien los hongos, y trocearlos con las manos.
- En una olla, calentar el aceite y freír la cebolla y el ajo unos segundos.
- Agregar los hongos y los champiñones y freír, moviendo de vez en cuando, hasta que se cuezan y suelten su propio jugo.
- Agregar el epazote y el caldo de pollo, dejar hervir y apagar.
- Dejar reposar media hora y recalentar para servir.
- Servir bien caliente poniendo bastantes hongos en cada plato y decorar con hojitas de epazote y chiles de árbol fritos. Acompañar con limones en cuartos y tortillas calientes.
