- Añadir el vino blanco y llevar a reducción (app 7-10 min fuego medio). Revolver constantemente.
- Una vez reducido el vino agregar los champiñones e ir añadiendo agua de a 100-200 ml cada vez. Revolver constantemente e ir reduciendo el agua.
- Repetir el paso 5 cada vez que veamos que se redujo el agua (si uno pasa un mezquino por el fondo de la olla el agua restante no debe juntarse, eso significa que necesita más agua)
- Una vez agregamos la última cantidad de agua, ir probando el arroz hasta que nos guste la textura cremosa (a algunos les gusta más o menos cremoso)
- En sartén aparte con cda de aceite (o mantequilla si gustan) saltear champiñones shiitake. Reservar.
- Encontrado el punto del arroz, añadir el queso rallado y revolver hasta que se derrita.
- Servir risotto y añadir encima los champiñones shiitake salteados y un poco de cilantro. Si se desea añadir más queso rallado.
