- 1 cebolla tierna pequeña
- Pimienta negra
- Mantequilla

- Pon el caldo a calentar en el microondas 3 minutos a máxima potencia. Corta la cebolla tierna en trocitos pequeños y lamina los champiñones.
- En una sartén antiadherente con un chorrito de aceite, (fuego medio), pon primero la cebolla, cuando empiece a hacerse añade los champiñones y pon un poco de pimienta (preferiblemente molida con el molinillo).
- Cuando los champiñones tengan color, añade el vino blanco. Sube el fuego y deja que evapore 2 o 3 minutos. Añade el arroz y rehoga.
- Vierte el caldo en la sartén, mantén el fuego alto hasta que empiece a hervir y vuelve a ponerlo a fuego medio. A los 15 minutos chequea cómo va el caldo, debe quedar meloso, un truco es pasar la espátula por el centro de la sartén, el caldo debe separarse y volver a juntarse, como si fuera una salsa. (Puedes guardar un poquito de caldo por si se quedara demasiado seco).
- En ese momento añade el queso (al gusto), ve removiendo hasta que se funda y quede una mezcla homogénea. Apaga el fuego.
- Añade a la sartén 1/2 cucharada sopera de mantequilla y remueve hasta que se integre, sírvelo. ¡Riquísimo!
▪️ Puedes usar el caldo que prefieras, a mí me gusta más con caldo de pollo, pero con caldo de verduras o de cocido también queda espectacular.
▪️ Si usas caldo de brick, no uses sal, la que lleva el caldo es suficiente. Si no es así, añade la sal junto con la pimienta en el paso 2.
